Today is ekadashi - fasting day - really means taking a break from certain common foods - but meals are eaten. Ekadashi turned into a-cook-ashi as I made my 2nd batch of yogurt and also my first batch of paneer (Indian rigotta cheese). All because the milk was nearing expiring - I get a gallon of organic whole milk from a nearby organic farm, so I can make my own additional dairy foods in addition to just drinking the milk. So it was a big thrill to see how rich the paneer came out - congealed into a smooth clump, very different from regular store-bought organic milk.
Paneer is really simple to make. I used 4 cups of milk and brought it to a boil; then on low boil, I squeezed in 1/2 a lemon. Right before your eyes, the curds and whey begin to separate. I skimmed out the curds (paneer). Some people mold into cubes and deep fry before serving. I like it just the way it is.
You dont get a lot of paneer, but you get a lot of whey. So I drank two cups of whey today, hooray. Supposed to be good for you, but I’m not sure why. It does feel good to use all parts of the product - nothing goes to waste.
Speaking of waste, an aside, I read an article today that a company in NM found a way to turn CO2 into energy - amazing that something ‘bad’ can be used for something ‘good’.
